The Lazy Girl's Stir-Fry Recipe

This is one of my favorite go-to meals when I am working from home and want a hot lunch or if I completely forgot about dinner and need to whip something up really quick. Takes less than 20 minutes!


  • 1 serving brown rice (or quinoa works too)

  • Fresh Stir Fry Vegetables (you can find these in the produce section. If they don’t have them, buy the frozen ones)

  • Stir-fry sauce (I like Kikkoman brand because there are no preservatives and only 3g sugar)

  • 1 can of Water Chestnuts (these add crunch and fiber)

  • Salt and Pepper

  • Slivered Almonds (optional)




  • Make rice according to box instructions.

  • In a large frying pan, heat up a little bit of avocado oil or olive oil.

  • Drain the water chestnuts and add to the pan. Cook for about 1 minute.

  • Add in the stir-fry veggies, salt and pepper and mix together.

  • After the veggies have been cooking for about 1 minute, add about ¼ cup of the stir-fry sauce (more or less to your liking).

  • Cook until the veggies are the texture you like them (I like mine a little crunchy).

  • Put the rice on the place, add the veggies and for an added crunch - you can sprinkle slivered almonds on top, as well.


This recipe takes about 15 minutes and makes enough for 2 servings.
